Rapidase protocols

Rapidase® Revelation Aroma is a high-purity glycosidase preparation engineered to act on the full range of glycosidically bound aroma precursors.
It is used in two distinct applications:

Below are the operational protocols for each application.

A) Aroma release protocol

Objective

Evaluate the aromatic impact of Rapidase Revelation Aroma through a controlled 6-week bottle trial.

Material:

  • 7 bottles of 750 mL
  • Rapidase Revelation Aroma enzyme

1. Prepare 7 × 750 mL bottles

  • Use the same wine for all bottles.
  • One bottle is kept as the untreated control (no enzyme added).
  • The remaining six bottles will receive weekly enzyme additions.

2. Prepare the enzyme solution (to achieve 2 g/hL)

For the test to remain representative, the enzyme solution is prepared in wine, not water, to avoid dilution.

Preparation:

• Dissolve 0.5 g of Rapidase Revelation Aroma in 500 mL of the wine being tested.
• Prepare a fresh solution every week.
• Each week, use 15 mL of this fresh solution per bottle.

3. Weekly enzyme addition (6 weeks)

For each of the six treatment bottles:

  1. Add 15 mL of the freshly prepared enzyme solution.
  2. Close the bottle immediately.
  3. Store all bottles away from light, at cellar temperature (>13°C).
  4. Repeat once per week for six consecutive weeks.

Each bottle corresponds to one contact time: Week 1 → Week 6.

4. Tasting evaluation

Perform tasting one week after the last addition.

Evaluate for each bottle (control + weeks 1–6): colour, nose, palate, and observations.

Goal: identify when the aroma release reaches optimum expression relative to the control.

5. Reproduce at full scale

Once the preferred contact time is identified, apply 2 g/hL in the tank at cellar temperature, and after completion, inactivate with 5–10 g/hL bentonite.


B) Smoke taint reduction protocol

Principle

Smoke-related volatile phenols exist in wine as glycosides. Using a complete glycosidase formulation will make available all the free forms of glucosides, which can then be removed.

  1. Convert into free forms (Revelation Aroma)
  2. Remove the free forms (Extraferm® D’tox)

Step 1: Convert bound glycosylated smoke taint compounds into free forms

Dose: 5 g/hL of Rapidase Revelation Aroma (Keep a volume of wine without treatment = control)

Contact time: Minimum 2 weeks in a tank > 16 °C Or 1 week at 25 °C in closed bottles with inert gas

Evaluation (vs control without enzyme addition):

  • Tasting (easy but not accurate)
  • Free smoke taints analysis (GC/MS analysis of guaiacol, 4-methylguaiacol, cresols and associated markers).

Step 2: Remove the free “smoky” compounds

Product: Extraferm D’tox

Procedure:

  • Add 20 g/hL of Extraferm D’tox, homogenise, and allow to settle.
  • After 48 h, rack and add a second 20 g/hL, homogenise, and let settle.
  • Rack off after 48 h

Treatment evaluation:

  • Tasting
  • Free smoke taints analysis (GC/MS analysis for final quantification)
