FRUITY SPICY RED WINES

PURPOSE

Fermivin® MT48 gives round, expressive wines with soft tannins and complex aromatic hints.

It can handle grape varieties with high polyphenol content (Cabernet sauvignon and franc, Marsellan) allowing a short maturation period as well as lighter palate profile like Merlot and Syrah.

When used in combination with the maceration enzyme Rapidase® Extra Color, Fermivin MT48 optimises phenol compound extraction.

Tasting notes

Fermivin MT48 produces rich and elegant wines with great intensity in terms of spicy aromas, black and red fruits, and plum.

Origin 

Specie: Saccharomyces cerevisiae var. cerevisiae.
Strain 4882 was selected and validated in the Bordeaux region (France) by the IFV (French Vine and Wine Institute), assisted by the CIVB (Bordeaux Wine Council).

Science and Technology 

Fermivin MT48 produces high concentrations of glycerol, resulting in finished wine that is rounder on the palate.
