Rapidase® Revelation Aroma allows for enhanced release of aroma from their glycosylated precursors contained in wines.
Its use allows for the production of wines with an intense and multi-dimensional bouquet. Also, in the case of smoke taint, this glycosidase formulation is the first step of a two-step protocol aiming to first reveal all the smoky aromas and then remove them.
Juice clarification by static settling or flotation is key to reducing solids, avoiding oxidation, limiting herbaceous compounds, and securing alcoholic fermentation with fewer indigenous bacteria, yeast, and toxic compounds.
A fast and efficient juice clarification will be achieved by decreasing viscosity, allowing for faster flocculation and more compact lees. A negative pectin test is mandatory, and the glucan level should also be checked.
Degradation of both simple and complex pectic polysaccharide chains, as well as glucans from rotten grapes, will improve filtration, speed up clarification, and enhance clarifity after fining.
