Fermivin VINEAE, a strain of Hanseniaspora vineae, is distinct from the commonly used Saccharomyces cerevisiae. It’s tailored to produce exceptionally floral wines and is capable of fermenting up to 10% alcohol by volume. This strain is versatile, suitable for various types of must—whether white, rosé, red, still, sparkling wine, or cider—and can be used alone or in combination with Saccharomyces cerevisiae depending on the alcohol potential.
