(note agrumate) dipende dal rilascio dei precursori presenti nell\u2019uva ed \u00e8 altamente sensibile all\u2019ossidazione e alle condizioni di fermentazione (~18 \u00b0C).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I caratteri di frutti rossi derivano dalla combinazione tra una leggera estrazione fenolica durante una breve macerazione e i composti prodotti durante la fermentazione. Se una leggera amarezza o durezza fenolica pu\u00f2 essere accettabile, gli enologi devono evitare anche fenomeni di diluizione.
