Questo metodo semplifica il processo di fermentazione eliminando la fase di reidratazione. <\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Che cos\u2019\u00e8 l\u2019inoculazione diretta del lievito secondo Oenobrands?<\/strong><\/h2>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Abbiamo introdotto questa tecnologia <\/strong>per aiutare i vinificatori a ottenere risultati costanti e di alta qualit\u00e0 in ogni lotto. <\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>La storia \u00e8 iniziata <strong>nel 2010<\/strong> con l&#8217;osservazione che una scarsa reidratazione dei lieviti secchi attivi (LSA) potrebbe causare una fermentazione lenta o addirittura bloccata, con conseguenti effetti negativi sulla qualit\u00e0 del vino. Inoltre, questa fase richiede molto tempo ed \u00e8 soggetta a errori, poich\u00e9 un processo apparentemente innocuo come l&#8217;aggiunta di lieviti pu\u00f2 avere un impatto significativo sulla produttivit\u00e0 della cantina e sulla qualit\u00e0 del vino.  <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:2%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Per rispondere a questa esigenza, abbiamo voluto modernizzare <\/strong>questo processo per migliorarne le prestazioni e la ripetibilit\u00e0. Dopo i primi test, ci siamo concentrati sui lieviti e su come renderli pi\u00f9 robusti. lievito <strong>Fermivin In-Line Ready (ILR)<\/strong> con quelli prodotti con lieviti Fermivin classici utilizzando un protocollo di reidratazione, i profili aromatici risultavano simili, sia a livello analitico sia organolettico.<\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Attenzione al colore<\/strong><\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p class=\"has-background\" style=\"background-color:#f7f7f7\">L\u2019aspetto visivo dei vini rossi fermentati con lieviti <strong>Fermivin In-Line Ready <strong>(ILR)<\/strong><\/strong> \u00e8 leggermente diverso. Questi vini tendono a presentare colori pi\u00f9 intensi, tonalit\u00e0 bluastre e violacee, e in generale una sfumatura cromatica leggermente diversa. <\/p>\n\n\n\n<p>Rispetto ai corrispondenti lieviti <strong>Fermivin <\/strong>classici aggiunti dopo la reidratazione, questo risultato dimostra come l\u2019inoculo diretto influenzi l\u2019aspetto del prodotto finale.<\/p>\n\n\n\n<div studi confermano che i lieviti <strong>Fermivin In-Line Ready <\/strong><strong>(ILR) <\/strong>producono vini con la stessa palette aromatica dei lieviti <strong>Fermivin<\/strong> prodotti con metodo classico, come osservato dagli utenti da oltre 10 anni. <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:1%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Evidenziano tuttavia alcune variazioni minori, principalmente in termini di intensit\u00e0 complessiva e caratteristiche legate alla variet\u00e0 d\u2019uva. <\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Sulla base di questa osservazione, abbiamo effettuato test confrontando la produzione con lieviti Fermivin In-Line Ready con la produzione standard che prevede la reidratazione, utilizzando diversi ceppi di Fermivin in condizioni differenti.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7\">\n<p>Per il Sauvignon blanc abbiamo utilizzato il ceppo <strong>TS28<\/strong>, che produce tioli varietali (3MH e 4MMP).<strong> Nelle nostre condizioni, abbiamo osservato una tendenza a ottenere una quantit\u00e0 maggiore di 3MH quando il ceppo TS28 \u00e8 stato utilizzato nella forma In-Line Ready <strong>(ILR)<\/strong> con inoculo diretto, rispetto alla sua forma classica inoculata dopo reidratazione.<\/strong><\/p>\n\n\n<div class=\"wp-block-image is-style-zoooom\">\n<figure class=\"aligncenter size-full g\/hL.\n<ul class=\"wp-block-list\">\n<li>Durante il riempimento del serbatoio di fermentazione.<\/li>\n\n\n\n<li>Per la vinificazione in rosso, \u00e8 possibile aggiungere il lievito ILR anche alla ricezione delle uve, durante il riempimento del serbatoio con le uve pigiate o nella parte superiore del serbatoio gi\u00e0 riempito.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La temperatura del mosto inoculato con il lievito ILR deve essere pari o superiore a 15\u00b0C.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>L\u2019aggiunta di <strong>Extraferm\u00ae D\u2019tox <\/strong>aiuta a gestire il livello di torbidit\u00e0 e la sua composizione specifica contribuisce a mantenere la vitalit\u00e0 e il potere fermentativo del lievito. Si raccomanda una dose da 20 a 40 g\/hL. Aggiungere contemporaneamente al lievito ILR.
