progettata per agire sull\u2019intera gamma dei precursori aromatici legati sotto forma glicosidica.<br>Viene utilizzata in due applicazioni distinte:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong><a href=\"#aromarelease\">Rilascio aromatico <\/a><\/strong>in qualsiasi vino (terpeni, norisoprenoidi)<\/li>\n\n\n\n<li><strong><a href=\"#smoketaint\">Gestione dello smoke taint<\/a><\/strong>, come prima fase della decontaminazione idrolizzando i composti fumosi legati<\/li>\n<\/ul>\n\n\n\n<p>Di seguito sono riportati i protocolli operativi per ciascuna aromatico<br><\/strong><\/h1>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Obbiettivo<\/strong><\/h3>\n\n\n\n<p>Valutare l\u2019impatto aromatico di Rapidase Revelation Aroma tramite una prova in bottiglia controllata di 6 settimane.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div Preparare 7 bottiglie da 750 mL<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Utilizzare lo stesso vino per tutte le bottiglie.<\/li>\n\n\n\n<li><strong>Conservare una bottiglia come controllo non trattato<\/strong> (senza enzima).<\/li>\n\n\n\n<li>Le altre sei riceveranno aggiunte enzimatiche settimanali.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>2. Preparare la soluzione enzimatica (per ottenere 2 g\/hL)<\/strong><\/h2>\n\n\n\n<p>Per mantenere un test rappresentativo, la soluzione enzimatica viene preparata nel vino, non in acqua.<\/p>\n\n\n\n<p>Preparazione:<\/p>\n\n\n\n<p>\u2022 Sciogliere <strong>0,5 g<\/strong> di Rapidase Revelation Aroma in <strong>500 mL<\/strong> del vino da testare.<br>\u2022 Preparare una <strong>soluzione fresca ogni settimana.<\/strong><br>\u2022 Utilizzare <strong>15 mL<\/strong> di questa soluzione per bottiglia ogni settimana.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>3. Aggiunta enzimatica settimanale (6 settimane)<\/strong><\/h2>\n\n\n\n<p>Per ognuna delle sei bottiglie trattate:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Aggiungere <strong>15 mL<\/strong> di soluzione enzimatica fresca.<\/li>\n\n\n\n<li>Chiudere immediatamente la bottiglia.<\/li>\n\n\n\n<li>Conservare al riparo dalla luce, a temperatura di cantina (&gt;13\u00b0C).<\/li>\n\n\n\n<li>Ripetere l\u2019operazione <strong>una volta a settimana <\/strong>per 6 settimane.<\/li>\n<\/ol>\n\n\n\n<p>Ogni bottiglia corrisponde a un tempo di contatto specifico: Settimana 1 \u2192 Settimana 6. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>4. Valutazione sensoriale<\/strong><\/h2>\n\n\n\n<p>Effettuare la degustazione una settimana <strong>dopo l\u2019ultima aggiunta.<\/strong><\/p>\n\n\n\n<p>Valutare per ogni bottiglia (controllo + settimane 1\u20136): colore, naso, palato e osservazioni.<\/p>\n\n\n\n<p><strong>Obiettivo<\/strong>: determinare il tempo di contatto ottimale rispetto al controllo.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>5. Riproduzione su scala di cantina<\/strong><\/h2>\n\n\n\n<p>Una volta determinato il tempo ottimale: applicare 2 g\/hL in vasca a temperatura di cantina e al termine del trattamento, inattivare con 5\u201310 g\/hL di bentonite.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-luminous-vivid-orange-color has-alpha-channel-opacity has-luminous-vivid-orange-background-color has-background is-style-wide\"\/>\n\n\n\n<h1 class=\"wp-block-heading\" id=\"smoketaint\"><strong>B) Protocollo di riduzione del difetto da fumo<\/strong><\/h1>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Principio<\/strong><\/h3>\n\n\n\n<p>I fenoli volatili legati alla contaminazione da fumo sono presenti principalmente sotto forma di glicosidi. Una formulazione glicosidasica completa consente di liberare tutte le forme libere, che possono poi essere rimosse. <\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex chiuse sotto gas inerte<\/p>\n\n\n\n<p>Valutazione (vs controllo senza enzima):<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Degustazione (approssimativa)<\/li>\n\n\n\n<li>Analisi GC\/MS dei
