Accelera in modo significativo il completamento della fermentazione malolattica. Questo risparmio di tempo pu\u00f2 essere decisivo per i vini giovani e per i vini con pH elevato ( &gt;&gt; 3,6) e pu\u00f2 limitare il rischio di deviazioni dovute ai batteri lattici o a contaminazioni da lieviti. <\/p>\n\n\n\n<p>Questo approccio sfrutta un ambiente caldo e ricco di nutrienti per ottenere una fermentazione malolattica pi\u00f9 rapida e controllata. <strong>Il risultato? Il pH risale successivamente mentre il lievito produce alcol. A causa di questi fattori, \u00e8 preferibile effettuare l\u2019inoculo batterico quando circa il 50% della fermentazione alcolica \u00e8 completata.  <\/li>\n\n\n\n<li>Non effettuare la
