Questa estesa solubilizzazione \u00e8 resa pi\u00f9 problematica dall\u2019inattivazione delle pectinasi endogene dell\u2019uva attraverso il riscaldamento. <strong>Di conseguenza, l\u2019uso di enzimi pectolitici \u00e8 essenziale, ancor pi\u00f9 perch\u00e9 la termovinificazione \u00e8 un processo continuo con importanti vincoli di tempo.<\/strong><\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p style=\"font-size:20px\">Le tecniche includono enzimi pectolitici e sistemi di chiarificazione come flottazione, filtrazione sotto vuoto o centrifuga.<\/p>\n<\/blockquote>\n\n\n\n<p><strong>La depetinizazione del mosto \u00e8 necessaria affinch\u00e9 le operazioni enologiche successive,<\/strong> come sgrondo, pressatura, flottazione o filtrazione, siano efficaci.
