Preparare la soluzione di alcool acidificato<br>Etanolo al 96 % acidificato con 1 % di acido cloridrico concentrato.<\/p>\n\n\n\n<p>2. Preparare il mosto da analizzare<br><br>Se il mosto contiene molte particelle solide, \u00e8 consigliata una filtrazione grossolana con carta.<\/p>\n\n\n\n<p>3. Aggiungere la soluzione al mosto<br>In una provetta, mescolare delicatamente (per evitare di rompere il gel di pectina) 2 volumi della soluzione di alcool acidificato con 1 volume di
