Cela se fait souvent imm\u00e9diatement apr\u00e8s la s\u00e9paration des solides dans le cas des c\u00e9pages blancs, et apr\u00e8s l&rsquo;encuvage ou la mac\u00e9ration \u00e0 froid pour les c\u00e9pages rouges. Il est essentiel de s&rsquo;assurer que le jus ou le mo\u00fbt est bien pr\u00e9par\u00e9 pour que la culture de levures puisse cro\u00eetre, assurant ainsi le bon d\u00e9roulement de la fermentation.  <\/p>\n\n\n\n<p><strong>Voici comment ensemencer : <\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>nos levures de la gamme Anchor, <\/li>\n\n\n\n<li>nos levures Fermivin produites de mani\u00e8re classique (<em>Saccharomyces <\/em>et non-<em>Sacc<\/em>.), <\/li>\n\n\n\n<li>directement dans le mo\u00fbt ou sur les raisins avec les levures Fermivin <strong>In-Line Ready.<\/strong><\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Comment proc\u00e9der \u00e0 la r\u00e9hydratation et \u00e0 l&rsquo;inoculation ?<\/strong><\/h2>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>L&rsquo;une des \u00e9tapes les plus importantes dans la vinification est la r\u00e9hydratation des levures.<\/strong> Cela garantit une fermentation r\u00e9guli\u00e8re et saine. Pour obtenir une population de levures viables d&rsquo;environ 3\u20134 x 10<sup>6<\/sup> cellules par millilitre de mo\u00fbt, la dose d&rsquo;inoculation recommand\u00e9e pour les levures s\u00e8ches actives est de 20\u201330 g\/hL. Apr\u00e8s l&rsquo;inoculation, la biomasse de levures augmente l\u00e9g\u00e8rement et la fermentation d\u00e9marre. Pour des conditions de fermentation plus difficiles, des doses d&rsquo;inoculation plus \u00e9lev\u00e9es sont n\u00e9cessaires.   <\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">\u2794 <strong>Levures <em>Saccharomyces<\/em><\/strong><\/h3>\n\n\n\n<p>Les levures Anchor sont inocul\u00e9es \u00e0 25 g\/hL et les levures Fermivin classiques \u00e0 20 g\/hL.<\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Le protocole de r\u00e9hydratation des levures s\u00e8ches actives <em>Saccharomyces <\/em>comprend trois \u00e9tapes principales :<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">1-<strong>R\u00e9hydratation <\/strong>:<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>\u00c0 40 \u00b0C, ajouter les levures \u00e0 un volume d&rsquo;eau \u00e9quivalant \u00e0 10 fois leur poids.<\/li>\n\n\n\n<li>Dissoudre 50 g\/L de sucre (saccharose ou mo\u00fbt).<\/li>\n\n\n\n<li>Lorsque le milieu atteint 37 \u00b0C, ajouter 20 \u00e0 30 g\/hL de levures s\u00e8ches actives en remuant activement pour casser les grumeaux.&nbsp;<\/li>\n\n\n\n<li>Laisser la suspension reposer pendant 20 minutes, puis remuer doucement \u00e0 nouveau. Ne laissez pas les levures dans l&rsquo;eau de r\u00e9hydratation plus de 30 minutes sans ajouter de jus ou de mo\u00fbt, sinon le nombre de cellules de levure diminuera.  <\/li>\n<\/ol>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:5%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">2-<strong>Acclimatation <\/strong>:<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ajoutez lentement, sur 5 minutes, du jus ou du mo\u00fbt \u00e0 la levure pour abaisser la temp\u00e9rature de 10 \u00b0C.
