Apr\u00e8s fermentation dans un milieu riche en nutriments, ces cultures se d\u00e9veloppent jusqu&rsquo;\u00e0 atteindre une densit\u00e9 et une vitalit\u00e9 maximales. Apr\u00e8s fermentation, le personnel de l&rsquo;usine collecte les cellules de levure actives pour produire notre<strong> cr\u00e8me de levure concentr\u00e9e.<\/strong>  <\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Levures inactiv\u00e9es<\/h2>\n\n\n\n<p>La levure active est rendue inactive par chauffage avant s\u00e9chage. Elle apporte de <strong>l&rsquo;azote, des min\u00e9raux, des vitamines et des oligo-\u00e9l\u00e9ments au mo\u00fbt, <\/strong>favorisant la fermentation alcoolique et le d\u00e9veloppement des levures. Elle favorise<strong> la survie des levures <\/strong>en fin de fermentation, lib\u00e8re des <strong>polysaccharides <\/strong>et am\u00e9liore le volume et la texture du vin.  <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Parois cellulaires de levure<\/h2>\n\n\n\n<p>\u00c9galement appel\u00e9es \u00e9corces de levure, ce sont les composants insolubles des parois cellulaires de levure qui ne contiennent pas de cytoplasme. Elles sont compos\u00e9es de <g id=\"gid_0\">polysaccharides<\/g>, de <g id=\"gid_1\">prot\u00e9ines, de lipides et d&rsquo;un peu de chitine.<\/g> Les parois cellulaires de levure absorbent les compos\u00e9s nocifs et offrent des facteurs de croissance et de survie (st\u00e9rols, acides gras insatur\u00e9s), optimisant l&rsquo;efficacit\u00e9 de la fermentation et \u00e9vitant les fermentations lentes ou arr\u00eat\u00e9es.  <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Autolysats de levure <\/h2>\n\n\n\n<p>La biomasse de levure <em>Saccharomyces cerevisiae <\/em>est autolys\u00e9e ou chauff\u00e9e sous conditions contr\u00f4l\u00e9es pour produire de la levure autolys\u00e9e. Cela lib\u00e8re des <strong>composants intracellulaires pr\u00e9cieux comme des prot\u00e9ines, des acides amin\u00e9s et des nucl\u00e9otides<\/strong>. Elles repr\u00e9sentent u<g id=\"gid_1\">n large groupe de mol\u00e9cules<\/g> avec une grande diversit\u00e9 en termes de taille, de charge (degr\u00e9 de phosphorylation) et de composition et ratio prot\u00e9ique ou glucidique.
