Voici quelques \u00e9l\u00e9ments de r\u00e9ponse concernant la pr\u00e9vention de toute perte et la stabilit\u00e9 des pigments rouges dans les vins. <\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>Qu&rsquo;est-ce qui donne la couleur rouge au vin rouge ?<\/strong><\/h2>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p><strong>Les vins rouges doivent leur couleur aux pigments qui sont extraits des peaux pendant la mac\u00e9ration dans les cuves de fermentation. <\/strong>Ces pigments sont les anthocyanes, que l&rsquo;on trouve dans les peaux de raisin de toutes les vari\u00e9t\u00e9s rouges et dans la pulpe des c\u00e9pages teinturiers. <\/p>\n\n\n\n<p>Pendant la fermentation et la mac\u00e9ration, les <strong>anthocyanes <\/strong>sont extraites des peaux des raisins et se retrouvent dans le mo\u00fbt, <strong>contribuant ainsi \u00e0 la couleur du vin, tant en termes d&rsquo;intensit\u00e9 que de nuances.<\/strong><\/p>\n\n\n\n<p>Sous l&rsquo;influence de divers facteurs, tels que la concentration de tanins, le pH, la temp\u00e9rature et la pr\u00e9sence d&rsquo;autres compos\u00e9s, les tanins peuvent r\u00e9agir entre eux et former des liaisons chimiques, ce qui conduit \u00e0 leur polym\u00e9risation.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p>Les liaisons chimiques form\u00e9es pendant la polym\u00e9risation des tanins peuvent \u00eatre de diff\u00e9rents types, y compris des liaisons \u00e9ther et ester. L&rsquo;une des \u00e9tapes de leur formation g\u00e9n\u00e8re la production d&rsquo;interm\u00e9diaires appel\u00e9s vinyl ph\u00e9nol et vinylguaiacol. <\/p>\n\n\n\n<p>Pendant la fermentation alcoolique du vin rouge, on observe un ajout de vinylph\u00e9nols et de guaiacol aux anthocyanes, entra\u00eenant la synth\u00e8se de pigments complexes et stables, les vinylpyranoanthocyanines (VPA).<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:1%\"><\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7\">\n<p>Cette r\u00e9action n&rsquo;est possible que lorsque des souches sp\u00e9cifiques de <em>Saccharomyces cerevisiae<\/em> pr\u00e9sentant une activit\u00e9 hydroxycinnamate d\u00e9carboxylase (HCDC) sont utilis\u00e9es, ce qui conduit \u00e0 la formation de vinylph\u00e9nols qui interagissent imm\u00e9diatement avec les anthocyanes extraites pendant la fermentation alcoolique.<\/p>\n\n\n\n<p>Les souches de levures <strong>Fermivin P21<\/strong>, <strong>Fermivin VR5 <\/strong>et <strong>Fermivin A33<\/strong> pr\u00e9sentent les niveaux les plus \u00e9lev\u00e9s d&rsquo;activit\u00e9 HCDC dans la gamme Fermivin, avec respectivement <strong>100 % pour P21<\/strong>, 80 % pour <strong>VR5 <\/strong>et 65 % pour <strong>A33<\/strong>. pas obligatoire, car les esters tartriques des acides ph\u00e9noliques semblent \u00eatre stables apr\u00e8s la fermentation alcoolique. Cependant, d&rsquo;autres ont rapport\u00e9 la lib\u00e9ration d&rsquo;acide ph\u00e9nolique libre pendant le vieillissement, ce qui constitue un risque de formation de ph\u00e9nols volatils en cas de contamination par <em>Brettanomyces<\/em>.
