class=\"has-text-align-left wp-block-paragraph\">Los \u00e9steres fermentativos, responsables de las notas afrutadas y florales, se favorecen a bajas temperaturas de fermentaci\u00f3n (~13 \u00b0C), aunque siguen siendo compuestos vol\u00e1tiles.<br\/>La expresi\u00f3n de los tioles (notas c\u00edtricas) depende de la liberaci\u00f3n de los precursores presentes en la uva y es muy sensible a la oxidaci\u00f3n y a las condiciones de fermentaci\u00f3n (~18 \u00b0C).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Los caracteres de frutos rojos resultan de la combinaci\u00f3n entre una ligera extracci\u00f3n fen\u00f3lica durante una maceraci\u00f3n corta y los compuestos producidos durante la fermentaci\u00f3n. Estos perfiles arom\u00e1ticos est\u00e1n fuertemente influenciados por las condiciones de maceraci\u00f3n (incluida la elecci\u00f3n de la enzima), la selecci\u00f3n de la levadura, la gesti\u00f3n de la nutrici\u00f3n y el control del potencial redox (turbidez, ox\u00edgeno y SO\u2082).<\/p>\n<\/div>\n<\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:20%\">\n<p class=\"has-text-align-left wp-block-paragraph\"><strong>Equilibrio estructural<\/strong><\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:70%\">\n<p class=\"has-text-align-left wp-block-paragraph\">La gesti\u00f3n del equilibrio entre el volumen en el centro de boca y la dureza fen\u00f3lica (amargor) constituye uno de los principales retos de la vinificaci\u00f3n de rosados. Este equilibrio est\u00e1 influenciado por el tiempo de maceraci\u00f3n, la estrategia de prensado, los programas de nutrici\u00f3n y el trabajo sobre l\u00edas. Aunque un ligero amargor o dureza fen\u00f3lica puede ser aceptable, los vinificadores tambi\u00e9n deben evitar la diluci\u00f3n.
