Aqu\u00ed presentamos algunos elementos que explican la prevenci\u00f3n de la p\u00e9rdida y la estabilidad de los pigmentos rojos en los vinos. <\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>\u00bfQu\u00e9 da el color rojo al vino tinto?<\/strong><\/h2>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p><strong>Los vinos tintos deben su color a los pigmentos extra\u00eddos de las pieles durante la maceraci\u00f3n en los tanques de fermentaci\u00f3n. <\/strong>Estos pigmentos, llamados antocianinas, se encuentran en la piel de todas las variedades de uvas tintas y en la pulpa de las variedades tint\u00f3reas. <\/p>\n\n\n\n<p>Durante la fermentaci\u00f3n y la maceraci\u00f3n, las <strong>antocianinas <\/strong>se extraen de las pieles de las uvas y pasan al mosto, contribuyendo al color del vino, <strong>tanto en intensidad como en matices.<\/strong><\/p>\n\n\n\n<p>Bajo la influencia de diversos factores, como la concentraci\u00f3n de taninos, el pH, la temperatura y la presencia de otros compuestos, los taninos pueden reaccionar entre s\u00ed y formar enlaces qu\u00edmicos, lo que conduce a su polimerizaci\u00f3n.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p>Los enlaces qu\u00edmicos formados durante la polimerizaci\u00f3n de los taninos pueden ser de distintos tipos, incluidos los enlaces \u00e9ter y los enlaces \u00e9ster. Una de las etapas de su formaci\u00f3n genera la producci\u00f3n de compuestos intermedios llamados fenol vin\u00edlico y vinilguayacol. <\/p>\n\n\n\n<p>Durante la fermentaci\u00f3n alcoh\u00f3lica del vino tinto, se observa una adici\u00f3n de fenoles vin\u00edlicos y guayacol con antocianinas, lo que da lugar a la s\u00edntesis de pigmentos complejos y estables: las vinilpiranoantocianinas (VPA).<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:1%\"><\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7\">\n<p>Esta reacci\u00f3n solo es posible cuando se utilizan cepas espec\u00edficas de <em>Saccharomyces cerevisiae<\/em> que presentan actividad de hidroxicinamato descarboxilasa (HCDC), lo que conduce a la formaci\u00f3n de fenoles vin\u00edlicos que interact\u00faan de inmediato con las antocianinas extra\u00eddas durante la fermentaci\u00f3n alcoh\u00f3lica.<\/p>\n\n\n\n<p>Las cepas de levadura <strong>Fermivin P21<\/strong>, <strong>Fermivin VR5<\/strong> y <strong>Fermivin A33 <\/strong>presentan el nivel m\u00e1s alto de actividad HCDC dentro de la gama Fermivin, con <strong>100 % para P21<\/strong>, 80 % para <strong>VR5<\/strong> y 65 % para <strong>A33.<\/strong> En la
