Exotics Novello
A Saccharomyces cerevisiae x Saccharomyces cariocanus hybrid.
A novel yeast for exotic, iconic, fresh and fruity white and red wines.
APPLICATION
For exotic, iconic, fresh and fruity white wines, with enhanced softness. In terms of taste, it decreases tannin intensity, astringency and bitterness, and increases softness. It enhances the production of fruity and floral esters, as well as thiols.
For soft, full-bodied and aromatic red wines, it decreases astringency, dryness and bitterness, whilst increasing mouthfeel and overall quality. It enhances notes of red and black fruit and spice, with decreased green, vegetal and balsamic characters.
