Nourish

NOURISH forms part of the Sustenance nutrient range that can be used to adjust the nitrogen and nutritional content of the must in order to ensure complete and QUALITY FERMENTATION.

PURPOSE

Nourish provides a complex source of organic and inorganic nitrogen during fermentation, as well as essential vitamins, minerals, trace elements, amino acids and stress resistance factors like sterols and unsaturated fatty acids. 

Nourish therefore secures yeast multiplication and viability during fermentation, ensuring optimum yeast performance. 

The assimilable nitrogen from the amino acids and DAP can be utilised by the yeast for ATP and phospholipid synthesis, whilst the thiamine allows for essential growth. 

The stress resistance factors ensure membrane integrity, especially towards the end of fermentation, as well as protecting the yeast against medium chain fatty acid inhibitor

Application

Nourish ensures a secure fermentation:

  • promote yeast multiplication, growth and viability
  • maintain a healthy yeast metabolism and prolong the life of the yeast population 
  • ergosterols regulate yeast growth, maintain membrane permeability and improve alcohol tolerance
  • compensate for nitrogen deficient must 
  • reduce the risk of sluggish or stuck fermentations 
  • efficient, balanced and complete alcoholic fermentation

Nourish enhances the fermentation quality:

  • inactivated yeast releases polysaccharides that can increase volume and mouthfeel
  • reduce the formation of H2S, other sulphur off-flavours, volatile acidity and other unwanted metabolites
  • provide optimal nutrition that allows for greater aroma intensity, balance, complexity and flavour profile
  • result in fresher, fruitier and less vegetal wine aromas
  • improve overall wine quality

With Nourish, aroma production is increased by up to 44%, compared to a competitor product or DAP.

Dosage

20 – 40 g/hL (10 g/hL delivers 10.5 mg/L or ppm of YAN).

Usage

Add Nourish at the beginning of the fermentation, after the lag phase of the yeast is complete. If two additions are required, add half the dosage at the beginning of the fermentation and the second dosage no later than halfway through the fermentation (when half of the sugar has been consumed).

Dissolve the product in 20 times its weight of must or warm water, avoiding lumps, before adding to the tank or barrel with homogenisation.

  • 1 kg re-sealable (box: 10 x 1 kg)
  • 5 kg re-sealable (box: 2 x 5 kg)

Composition

Inactivated yeast, di-ammonium phosphate and thiamine.

Storage

Store in a cool, dry, well-ventilated area, away from direct sunlight (<20°C); avoid moisture and high temperature.
